Tenderloin Steak with Black Truffle
Ingredients:
90g tenderloin steak
70g mushroom sauce
15g crispy chips
1g fresh black winter truffle
1g micro cress
Preparation Method:
Preparing the Mushroom Sauce:
In a hot skillet, sauté the mushrooms with a pinch of salt until they lose their moisture and acquire a nice golden color.
Add finely chopped onions with olive oil, and cook until soft and slightly caramelized.
Add cooking cream, then season the mixture with Dijon mustard and herbs, and let it simmer for 5 minutes until the flavors meld.
Strain the mixture using a fine sieve (chinois) for a smooth texture, then return it to the heat adding concentrated chicken broth.
Cook the mixture for an additional 15 minutes until it thickens and takes on a slightly dark color.
Preparing the Steak:
Season the tenderloin steak with salt and black pepper, then cook on high heat in a hot skillet until it develops a golden crust on the outside, while keeping the desired level of doneness inside.
Let the steak rest for a few minutes before serving to ensure it retains its juices.
Serving:
Place the steak on the plate, and pour the rich mushroom sauce over it.
Garnish with thin slices of fresh black truffle to add a luxurious earthy flavor.
Add the crispy chips to provide a contrast in texture to the dish.
Finally, garnish with micro cress to enhance the flavor and add an aesthetic touch.
