(Serves 10 persons)
A popular delicious cold Thai starter.
200g Beans vermicelli
2-3 Cups boiling water
250g Peeled and deviened shrimp or about 500g with shell
Or 1½ Cups cleaned, boiled shrimps (optional) *
½ Cup mint leaves torn by hand
1 Tablespoon green chilli, deseeded then finely
Chopped or thinly sliced
1-2 Tablespoon spring onion, thinly sliced
¼ Cup lemon grass, peeled and thinly sliced
1 Red chilli, deseeded then finely chopped
Dressing:
½ Cup lime juice
6 Tablespoons + 1 teaspoon fish sauce
1-1 ½ Teaspoons chilli paste, as desired
2/3 - 1 Teaspoon salt
For Serving:
A few Romano lettuce leaves (optional)
¼ Cup chopped coriander with a few full sprigs for garnishing
2-3 Tablespoons roasted peanuts
A few boiled shrimps, retained from the above shrimps
1-Whisk dressing ingredients and set aside.
2-In a bowl, cover vermicelli with boiling water.Cover and allow to stand for 10 minutes. Strain and rinse with cold water.
3-Using scissors, cut vermicelli into three equal parts and allow to cool. In a mixing bowl, toss vermicelli, shrimps and the above listed ingredients up until the red chilli paste.
4-Sprinkle with dressing while tossing until the ingredients are completely coated. Season to taste.
5-Line the serving dish or individual serving dishes with lettuce leaves. Serve salad. Sprinkle with coriander leaves, retained shrimp and peanuts.
Note:
Shrimps can be horizontally sliced, then mixed to ensure even distribution in the salad.

An excellent source of omega-3 fatty acids which are very good for the heart. It strengthens the heart muscle and reduces the chance of getting heart attacks.
However, shrimps are high in cholesterol.
